Japanese Style Fluffy Pancake Gluten Free

Ingredients
2 eggs1 tablespoon milk3 teaspoon water1 teaspoon vanilla1/4 cup Gluten Free Flour (I use Bob’s red mills 1 to 1)1 teaspoon baking powder1/4 teaspoon salt2 1/2 tablespoons sugarbutter (optional)maple syrup (optional)powdered sugar (optional)
Directions:
separate egg whites and yolks into two bowlsto the egg yolks add in milk, vanilla and whisk togetherstiff in Gluten Free flour, salt and baking powder into egg yolk mixturewhisk egg whites until they begin to get foamy, very slowly add in sugaronce egg whites stiff peaks form slowly add into yolk mixture spoonful by spoonful and gently fold in.gently pour into a piping bagspray pan with non stick oil, and turn to medium heatmake two evenly sized pancakes with half your mixture, add in 1 teaspoon of water to pan and cover with lidsteam for 5 minutesadd the rest of your mixture right on top of your pancakes add 1 teaspoon of water to pan and coversteam for 3 minutescarefully flip pancakes, add 1 teaspoon water to pansteam of 3 minutesremove from pantop with butter, maple syrup, or powder sugar
