Strawberry Shortcake Gluten Free Overnight Oats

Ingredients
1 cup Gluten Free old fashioned rolled oats (I used Bob’s red mills)1 tablespoon chia seeds5 ounce container of coconut milk yogurt, coconut flavored1 tablespoon almond milk1 teaspoon vanilla extract1 tablespoon maple syrup1/2 tablespoon honey (skip honey and use extra maple syrup to make this vegan)1/2 cup diced strawberries1 teaspoon lemon juice
Directions
place GF oats and chia seeds together in a medium size bowl, container or mason jar.add in coconut milk yogurt, almond milk, 1 tablespoon of maple syrup, almond milk and vanilla extract. mix together well.wash and dice up your strawberriesin another bowl, add strawberries, lemon juice and honey (or maple syrup for vegan option)place strawberry mixture on top of GF oat mixturelet sit in fridge for at least 1 hour before serving
